Fresh Jerky from "The Jerky Outlet" Central Michigan

When i go hunting in Michigan we always stop by "The Jerky Outlet". They have quite a bit that they call "fresh jerky" and they store it in the refrigerator. It is still very moist and they indicate that it needs to be refrigerated. The have it in Elk, Buffalo, Venison, Turkey and Beef and in a multitude of flavors.  Would this be considered Kippered Meat? I ask as I'm trying to reproduce this and I am looking for ideas?

Their instructions for it are as follows.
CARING FOR YOUR FRESH JERKY
When you receive your package it does have to be refrigerated.  Once the air tight package is opened it has to be transferred to a Ziploc bag or Saran Wrap and it should keep for up to 7-10 days in the refrigerator.  You can freeze your jerky in a Ziploc Freezer bag for up to 3 months.
