Price and Weight of Brisket??

So I was thinking of having my parents over on sunday for Fathers Day and with I being a father also, this would be perfect.  Anyways, I called around to get prices of brisket and wow.

I've gotten prices so far of $6.99, $7.99 and $8.99/lb.   And nobody has bigger then 7-8 lbs.   I've read over this forum just to learn about smoking and people are getting 12+ lb briskets.   Is this something I need to custom order for size?   A local farm I called wants $7.99/lb avg weight 6-8 lbs.   

So how are people on here getting brisket for under $5/lb   

I've haven't checked out Walmart yet.  Ive read good things and bad things on here about the brisket there.

So any suggestions or advice?

First let me say welcome to the forums, this is a good place to asK questions and learn a lot. As to your question, I'm sure the prices you are being given are for trimmed brisket flats, that is why the weights are lower and the price per lb is higher. If you can find packer cut brisket (whole untrimmed brisket with point and flat intact) they should be quite a bit larger and also substantially cheaper per lb, although there will be a fair amount of fat. I'm in Sioux Falls, SD and happened to be in Costco last night. They had USDA Prime grade packer cut briskets priced at 3.79/lb. As a comparison their trimmed flats were Choice grade and priced at 5.99/lb.

Thanks for the welcome.   I went to walmart for some spices and noticed exactly what you said and your probably right.  I ended up picking one up at walmart for $2.98/lb.  it does have a lot of fat on it.  I'll trim that down just a little but know to leave some for self-basting. 

The one I got is huge though and I know won't fit in my Bradley.   Just got to figure out how to cut it to fit.  Any ideas?   

Btw, it's a 15lb one.  Wasn't looking for something that big but it was the smallest they had.   Lol.  Any help would be great.  Thanks again!

Don't cut it.  Bend it.  Check out susanminor.org and look for brisket recipes.  I think "Pachanga" has a how to with large briskets.  The experts will be along shortly, I'm sure, with the details.  But you don't need to cut it down.

BTW, welcome from Nebraska!!

I just did three briskets and separated the points from the flats. Then put the three flats into the Bradley and the points in the GMG DC. I did trim some of the thick fat down but made sure there was enough to help keep it moist. Everything came out great. I did have to bend two of the flats, even with the points removed. But it all worked great. I did not use a rub, just salt, pepper, granulated garlic and granulated onion. My niece wanted them for Memorial day because she had friends from Texas coming in. They loved it as well, even though I used hickory and not messy wood.  :)

Hey everyone, I did read the posts about them being to large and bending it.  That's what I did.  It was almost still too big but worked.  I'm 6 hrs into the smoke with an anticipated 24 hr total time or more.  Since you can't predict how long it will take.
