How long can I rub my meat for

I'm looking to do pulled pork for July 5th.  I want to get a jump on it.  Can I rub it this week and let it sit in the refrigerator until I smoke it Friday / Saturday?  What is longest I can leave the rub on before I smoke it?

i usually apply the rub the night before ., place in fridge over night then  smoke. Most i have  ever went  with a  rub on a  piece of meat was  24 hours very little difference if at all, a  few hours  compared to 12 i can  tell the taste difference so i say do 12 to 24 prior to the smoke

I have never rubbed in advance. I rub and stick straight into smoker. I doubt if rubbing early has much effect on outcome. Injections might. Never tried those either with a butt. Most of the smoke and rub flavor on mine are in the bark. I remove the bark, chop it up fine, pull the butt, then sprinkle the chopped bark all through the meat. I will eat some for dinner then vac seal the rest in appropriate portions and either into the fridge or freezer. The saved portions always have more flavor than the first batch eaten.

If it is more convenient for you to apply the rub early, you can do it a few days early. A week early will depend on the "Use by date." If you apply the rub early, tightly wrap it in plastic wrap, and place it on a sheet tray before placing it in the refrigerator. That will allow the moisture that is draw out of the meat to stay in contact with the meat, and allow some of the moisture to be drawn back in. You may want to dust it with more rub just before placing it in the smoker.

I use to apply my rub early, but now I just apply it 1 to 1.5 hours before placing it in the smoker. Just long enough until the meat get "sweaty".

Well, haven't we all grown up, staying out of the locker room with this title.

I usually let my rubs marinate for over night to 24 hours or so.
