New BACON Flavor suggestion...

All you meisters out there.  I am thinking of a new BACON flavor.  I am looking at HONEY, is there anything that is called a "Natural Honey Flavoring" besides just honey.  Honey to me is so light that it might not come through.  My other BACON fart was to do a Honey/Jalapeno combo.  There is two ways to do this "I think", first was to use my old stand-by of dehydrated Jalapeno, dust the outside then add honey to my bag and let cure OR I would get fresh Jalapenos and Serranos, clean and mutilate them and then add honey.  Any suggestions or does not even sound good?

I used Len Poli's honey cured bacon recipe once with a very strong floral honey from Elba.  The flavor of the honey came thru big time and was in fact too strong for my taste.  I've also used lemon or orange blossum honey that we pick up when we are in Spain and like it.  So, if you have a strong honey you'll definitely taste it in my experience.

Have you ever had raw honey? That is honey that has not been processed, so you will get bits of wax and pollen in it. If you compare clove honey from the same hive, one processed and the other raw, there is definitely a distinct difference. Also there are different honeys depending on which main plant the bees get their nectar from. For example, buckwheat honey has a strong flavor.

Maybe if I go to the local health food store they will have that...good Idea there Hab.

May I ask, is that recipe very long or can you give just a list of ingredients?...that sounds very interesting to me.

Buckwheat honey is very strongly flavoured and will come through just about anything, I have found. One honey that I try to lay my hands on when I can is Fireweed Honey...hard to get..but if you can it's very nice indeed. There are some herbal honeys out there too...I have tried Thyme and Rosemary in the past...cannot remember where I picked them up, but herbal shops my know where to locate them.

Your right Greg, it's a real good tasting honey. I picked some up awhile back in Palmer Alaska. Fireweed is in bloom right now up here and the bees will be making more honey soon. Can't wait! :P

Unfortunately, been a hot, really dry July up here in my neck of the woods. There have been a good number of forest fires north of here and that is just what will kick off the fireweed later in the summer, or for sure next spring. So hopefully, there will be some fireweed honey coming in the future. Gotta get me some...MW has got me drooling now....

Here's the link for Len's recipe http://lpoli.50webs.com/index_files/Bacon-HoneyCured.pdf.  No I haven't tried raw honey yet on bacon although we get it sometimes from my brother in law in Berlin who keeps bees.  His Linden honey is really good.

Note:  I didn't use the liquid smoke called for in his recipe.  Smoked the bacon with hickory and that was plenty of smoke for my taste.

Thanks Rens...I don't like Liquid Smoke either...It just doesn't seem right.

HAB...Dang I didn't think of that.

GPS...I noticed a lot of folks selling it on the web...I wonder how much it is for real or watered down.

I make a bbq sauce using chipoltes in adobo and raspberry jam.  Might make a nice tasting bacon just using those 2 ingredients.  Sweet and spicy :P.
Some people say BBQ is in the blood, if thats true my blood must be BBQ sauce.

Chipotle and raspberry barbeque sauce is my favorite. Did you use Paul Kirk's recipe?

Nope its my own creation but I just read his and it does sound good :P.
