Jerky newbie

Hey fellow smokers. I'm sure this has been asked and answered before but here goes again. I've never done my own jerky. What do you fine folks recommend for meat and how thick should it be?

You can use any lean meat from beef to venison. I normally cut mine 1/4 inch thick.
