Hello from Pittsburgh

I just picked up a used Jim Beam Bradley.  So far I have done chicken thighs and walleye.  I have used charcoal and propane smokers in the past and this is way easier especially since I have no patience haha.

Hi and welcome from South Dakota!! How did the walleye turn out? I've smoked trout salmon and paddlefish but never walleye. Might have to give it a try.

I was skeptical from reading some prior posts but it turned out 10 times better than I expected.   I put it in a mild brine with more sugar than salt and made a honey and soy sauce glaze I brushed on before smoking.
