Fresh brat

Is it ok and I know not necessary to add cure to fresh brats? I figured knowing I am making 10-15 lb batches and going to freeze most of it that the added protection can't hurt.

You're correct on both counts it won't hurt and it's not needed. It will change the taste and color so they won't really be brats anymore....I never do.
