We had an abundance of peppers of various sorts this year so I smoked some.  I used a mixture of about 80% red peppers of the type used in Hungary for mild paprika and 20% red Anaheims.  Split them all in half lengthwise retaining seeds and dried them in a food dessicator until they felt like leather but were not crackling dry.  Then into the Bradley (four racks full of peppers) for five pucks worth of mesquite.  Didn't use the main heater just the generator and maintained 150F.  After two hours took them out and they were dry enough to crack.  Ground in a spice grinder to powder.  This mix is some kind of good.  Light smoke flavor, a trace of heat and a full bodied pepper flavor.

That sounds soooo good Tom I can almost taste and smell it from here. I've got to get back down in the lower 48 this winter and load up on fresh picked peppers to bring back.  :P :)

Nepas, I meant to ask you what type of herbs you were growing and how long do they last before replanting?

I grow the peppers. The package says 4 to 6 months but i have found that after 6 months the peppers seem to get smaller ??? The gourmet herb last much longer for some reason. I been thinking on another unit for just peppers.
