Eight Less Chickens To Worry About...

...'cuz I've got sixteen legs a-marinatin' as I type! 

I'm doing a little experimental work with rubs/marinades on this batch. 

I *loved* the results of the last batch of chicken legs out of the BS, except for the rubbery/leathery skin.  Any pointers?  I'm thinking butter dizzle and under broiler until crisp?  I plan on working on solving that problem this time around...last time, the chicken under the skin got eaten way too fast.  Including, I might add, the skin itself on some people's plates.

Here are the four different approaches:

1. McCormick's Salt-Free Chicken Seasoning
2. Lawry's Original Seasoned Salt
3. McCormick's Lemon-Pepper Seasoned Salt
4. Stubb's Chicken Marinade

Each bag contains the lower extremeties of two dead birds, thus, four of each flavor. 

I've just decided to further extend my experimentation...I'm going to smoke two of each tonight and the remaining legs tomorrow.  This experiment will enable me to judge the effectiveness of time spent in the rub/marinade (at least for chicken legs). 

I'll fire up the smoker to 230 just before kickoff (Monday Night Football), put the chicken in at halftime (more than enough preheat time, for both chicken and smoker), then wait for IT 165.  Should take +/- 3 hours at temperature of about 220 (I find the BS runs about 10 low).  Will apply smoke whole time; planning on using Apple:Hickory:Apple (1 hr:1 hr:1 hr).

I will use the same wood combination tomorrow, to cut back on as many variables as possible.  Then I have to order more wood pucks.

I'm realizing right now that this is a waste of wood, to an extent (smoker isn't as jam-packed as it could be/has been).  You know how that old saying goes: have to break some heads to make a sociopath.
