giving brisket a try

Did a chicken yesterday as my first smoke, came out pretty good. Headed off to the local meatpacker and I was in luck. He had a nice brisket (about 7 lbs) and I also scored on some pork bellies to give bacon a shot. Plan to rub the rib tonite and put her in the smoker about 6-7 am. Don't really mind when it finishes as I don't have to work till Sat. Any suggestions? I paid 1.99 lb for the pork bellies. Is this a good price. Comments welcome

Hi, welcome to the forum.  BS does an excellent job with ribs. Im sure yours will turn out great.  I personally use the technique that Iceman posted.  They have been great everytime.  Usually takes me about 7 hours of cooking time.  Here is the link for you to try.

I think I also paid $1.99 a pound for the 15 LB pork belly I purchased about a month ago.  Of course it was more than a few minutes ago, and although my memory is real good, it is awful short. :D

Thanks for the advice. I did use Old's rub recipe. Brisket went in at about 9am with 4 hrs of cherry pucks and 1 lb slab o bacon on the top rack above. It's 1 pm now and i just changed the water bowl. Internal temp reading 152. door temp reading about 200. I have to get me a dual probe maverick. :D

Excellent.  Can't go wrong with multiple probes and the remotes are really helpful for being able to roam.  Let us know how the tasty morsel comes out.

Thanks but the truth is when we put together that site it was a major collective effort from several members here.
