To boat or not to

Here is the situation team.

I have a brisket off one of our critters.  The problem is we raise a lean breed of cattle so the fat is minimal.  This is my first brisket.

1. I'm thinking bacon on top rack or should I lay directly on brisket when smoking? 

2. Thinking I should boat after 5 hours?

3. should I put some au jus or apple juice in the boat? if so how much?

4. Punt?

5. come up with an option play?

I did not "boat" mine (so far nobody has explained that term to me).  My cut was mildly marbled but had a decent fat cap.  Decided that bacon was not necessary and did not want the bacon flavor added anyway.  I sparyed a little apple juice anytime I opened the door and sprayed a good bit when I FTC'd.  Turned out great.

Boat= loosely wrap up in tin foil.  I think. The bottm would hold juices thus term a boat.

Me come from the No-Boat crowd....I just FTC.  I have put different types of fluid in with my FTC.  ME do brisket...ME PUT IN AND LEAVE SUCKER ALONE... ME WAIT TILL INTERNAL OF 185...ME DON"T EVEN THINK OF OPENING THE DOOR....TILL DONE...IMHO

Well I boat~~!  That is to say after the smokin' period I place my brisket(s) in a throw-way-pan add a splash of apple juice and then close it up with foil. Back into the smoker to finish the job. At 185F I FTC then.

Well I boated as lean as this piece is I opted for the boat this morning.  I spritzed it with some beef broth soup.   I let you know if this turns out to be brisket or jerky.

I stole a little slice when I FTC and I liked, so did Mrs.  We'll see how it goes over for supper for the outlaws tonight.

It turned out pretty good.  Rating=8.5 not bad for first time.  Should used oak instead of hickory. I think I should have boated it a little earlier maybe with some aujus and sliced onions.  Rushed a little at the end, took 16.5 hours plus only 2 hours of FTC.  All in all pretty good and all enjoyed.
