What is this?

I am in the middle of smoking chicken leg quarters and I open up the smoker to check on things and black flaky material is flaking off of the inside surface of the smoker.  What is that?  Smoke Residue??  Thanks.

Mike, I have that happen occasionally. It usually happens when I let the BS pre-heat for a good while and open the door initially to put in the meat. My guess is that the heat dries off the smoke residue/ build-up of the interior while it's empty- nothing in there to provide moisture for that stuff to stay stuck to the inside walls.[?]

That's just my guess. I simply blow/suck out (shopvac)what I can prior to putting in whatever I'm smoking. If not, it just keeps flying around every time you open the door after that.

Thanks for your reply Cold Smoke.  The chicken turned out great.  So tender it just fell off the bone.  It amazes me each time how well this food turns out.  I'm in BBQ Heaven.
