Odd question...tomato sauce

Okay, I've been wanting to do some canning, so this year, Dad and I are planning to do some Sweet Corn for the freezer (got my recipe's and verbal help already), and I was thinking today that I'd like to make some tomato sauce similar to the Hunts Tomato Sauce that I buy in the stores.  Did a Yahoo search, and can't find exactly what I'm looking for (all of them add peppers and onions and other stuff I'm not interested in...some seasoning is fine though).  I'll have to check the ingredients on the commercial sauce to see what I'll break down and add, but do any of you have instructions for doing this?

This is a very good and simple sauce.  Use whole canned tomatoes, I use San Marzano (a number 10 can) available at Costco.  Liquefy in a food processor.  Take 5-10 cloves garlic and 3-5 white onions through the food processor.  Olive oil in a big pot, saute the onions/garlic (add salt pepper to taste) for 5-10 minutes.  Add the tomatoes along with a bunch of chopped basil and parsley.  Cook for most of the day on low heat partially covered.  Yum

Thanks for the help, but ya missed something...I don't do onions.  :P ;D

Got some 'maters in the garden, the can says tomatoes, water, salt, spices, and tomato fibers.  Oh yea, and citric acid or something like that.

I'm betting that you could make that same recipe and omit the onions :D  No, I didn't miss the no onions part.  Just figuring that someone that does like onions might read this ;)

I am guessing that you will be using fresh tomatoes. You will need to make juice out of them first, then add whatever seasonings you want, to try to match the Hunt's. You will need to cook them down to get it thicker more like the sauce and not just juice.  I think it depends on the tomatoes whether you need to add the citric acid or not (How acidic the tomato is). Look in the canning supplies in the grocery store they have cans of citric acid for canning. I usually use a pressure canner, but with tomatoes you can do a hot water bath. There are some web sites that would have the correct times etc. to do the canning if you do a search.  Probably some nieghbor ladies around that could help ya too ;D

Was just playin' with ya, acords, no harm, no foul. :D

Dad brought 2 in from the garden Saturday, a little orangish instead of the bright red that I'd like to see, but should work.  Once enough are harvested, I'll give it a go.

The ctric acid is for safe canning. For cannng tomatoes are border line low acidic (I know sounds strange but true) so you have to add citric (lemon juice or citric acid) to make it safe. If there is other veg added this drops the acidity level even further which causes added citric a must....according to Bernardn I read today before reading ths post.
