Venison Jerky

Have 9 lbs of venison jerky thats going to be smoked after it thaws out. Will post pics later.

After a homemade dry mix on the Bambi I decided to give him a double shot  ;D

Then into some smoke tomorrow, 3 hickory @170* then into the Big *C* dehydrator @160* until done  ;D

I have to say my new dehydrator works fantastic!

I have already done around 20 lbs of jerky. I just apply 1:20 of hickory at 170 degrees, dab the jerky off with paper towel and into the dehydrator at 155 degrees. The are two things I noticed, the first is how much quicker it is this way and the second is how much easier clean up is.

I agree with you Mike. They are fast and work very good. Did you get the jerky screens to place on your metal racks.

Yup.. sure did NePas. Although so far I haven't used them. It seems after the jerky comes out of the smoker it is solid enough to not require the screens. Al least so far (2 batches) that's what I've found.

I did Reveo the venison with some extra Beam  :o this morning before the smoke.

NePa,  how long total time does it take you doing it both in the smoker, and dehydrator? How big are your batches?  I have some deer jerky going as we speak in the Bradley. It is a big load, using 8 racks upright and inverted, with about 11 lbs. And another 24 lbs to go that is cured and in ziplock baggies in the fridge ;D

I have the same set up for jerky as NePas. I usually do 8 racks at a time in the smoker, same as you. I find for my taste I use 1 hour 20 minutes of hickory in the smoker then I take the jerky out, blot them off with paper towel and put them in the dehydrator at 155 degrees. The Cabela's commercial dehydrator will probably hold almost double the amount you can get on 8 Bradley racks. I find the time in the dehydrator to be approximately 3 to 4 hours for whole muscle beef and some where around 4 to 5 for lean ground beef.

Speaking of deer nepa anybody getting any? herd from any customers I hunted Rexmont here in lebanon county all week muzzle loader and seen one ten point buck unfortunate for me could not kill. Also i would love to find some one that has a recipe for pa deer bologna and guesses there. by the way hows the hamburg store doing ?

Yeah been a few come in and say they got em. One store manager went to Canada got a moose and 2 sheep. Store not been too busy with all this warm weather we been having. Hunters just dont want to wear all their gear when too hot.

I'm bout ready to down this buck in my back 20  ;D
Along with a few gobblers, tree rats and a couple ground dawggys  ;D

yeah right now hunting is not fun and the deer do not seem to be moving i guess rifle season will pick her up !

My son got a nice buck in the youth season.  That is what I made into jerky, it looks like I need to get one of those Cabelas dehydraters ;D Does it work better using the dehydrator after smoking then just keeping it in the Bradley until it is done?
