8 Month Old Smoke Pays Off (TASSO)

8 months ago i dry cured for 3 days some pork tenderloin. After the 3 days i rubbed it and smoked it, Vac sealed and let it sit at room temp for another full day. After i took the 6 vac packs of tasso and put em way back in the freezer.

Here are the results.


Mighty tastey as well. Think i'll chop some up into a pot of pinto beans tomorrow  ;D

Photo is only 3/4 lbs of the 5 lbs i did. Had to slice a piece and taste it  ;D

Man that looks excellent! I love tasso! Never thought about making it...but I might try now! :)

Well if i can remember right i rubbed the pork with some dry cure mixed with some cayenne powder and let it sit in a vac sealed container for 3 days. Then i took it out and wiped off the cure/powder and rubbed into the pork more cayenne, smoked paprika, onion powder, garlic, ancho powder, salt, pepper and 1 tblsp turbinado sugar. The ancho powder gives it a little kick.

I then vac sealed it again and let it sit for another full day at room temp. NOTE: I used vac containers for the making and vac bags for the freezer.
After the last vac container i smoked it @ 170* with hickory for 2 hrs. Then no smoke @ 185* until it was done (think it was  1.5/2 hrs more)

Then let it cool and dry at room temp again before vag bags into freezer

WHEW BRAIN FOGGY  ;D
