NEED ADVICE FOR SMOKING DEER ROAST

You have to be really careful trying to get to medium well with venison. Well done will be around 170 F and you don't want to get anywhere near that. I wouldn't go past 160 F and that is taking into account the continual cooking while it rests. Pull it early and check with an internal thermometer. You can always cook it more if need be. 

It certainly wouldn't hurt to use the bacon but you'll lose the natural delicious taste of the venison. Slow cooking is the way to go and it won't get tough like beef unless you seriously go for a well done piece of meat.
