Your right, really not a problem on the temp. The only thing is I usually preheat to 260 or 280 but I'm sure preheating to 250 would be fine. I'm currently running a PID but this is certainly on the right track for something that will be more "plug & play".

I'm not sure but I think Thermo Works has a section on the wed site that lets you build your own sensor, length, material, end type, etc.
The Auber controller works good according to a friend of mine that has it and uses it with the OBS.
The only thing he does is preheat the smoker with out the controller hooked up then once up to temp he plugs it in. One other thing was he missed not having the alarm that the PID has that I built him. No biggy if your using the Maverick though.
