I was doing a couple of 10 lb loads of jerky (10 lbs of ground and 10 lbs of whole muscle) and decided to improvise in order to make the 4 rack DBS hold all 10 lbs at a time. I started with a piece of 1 x 6 and cut it into strips 2.5 inches wide and 11 inches long. This allows me to add an additional 4 racks. Counting the 4 inverted racks that's a total of 12. Here's a picture of it in action.

Very nice.  How did you attach the strips?  Is it permanent?

NICE!  That is a great idea and adds a ton of volume.  Thanks for the picture!

They are not attached, they just stand on top of the edge of the inverted rack below. When the rack below is inverted, the shape of the rack is such that it causes the spacer to lean towards the sidewall. Also the 1 x 6 that I started with had a little "cup" to it which also helped. It works very well just slide the bottom rack in, then slide the inverted rack in, slide the spacers in and finally slide the additional rack in.

Real smart, Mike. Simple but smart. I've got my ground meat mixed with Hi Mountain garlic & cracked pepper in the fridge right now. I'm taking your suggestion from the "jerky" thread and will smoke then dehydrate in the morning.

Keep us posted how it turns out OnTrack!

Nicely done!  May take a few extra minutes to rotate, but that is sure enough maximizing the space.  ;)
