6 days ago I put starting the curing process on a Pork Loin (total of 15 lbs) to make some bacon.
1/3 is Hab's recipe, 1/3 is Hab's recipe with maple syrup, & 1/3 is Hab's recipe with Cyanne Pepper added to the rub.
6 days of patiently waiting and turning the pieces of meat in the cure.
6 days of thinking of the wonderful bacon that is to be made.
And on the 6th day it started to rain & rain & rain & . . .
Seems that it is going to rain for the next 2 - 3 days so no chance of running the smoker.   :(  :(  :(

Looks like I am going to have to cook in the oven  :(   :(   :(

So, no sweet taste of added apple wood smoke to enhance my eggs benedict.
Do plan on serving some with recently smoked cheeses though.

You can always move into the garage but if you can't.....

Got liquid smoke?  You can always go the commercial way and use it.

Yes the rest of you can now stone me for saying it.

It's a real bummer when that happens! Happened to me all too often.  :(

Hey Scotty-G, just noticed what looks like the Tardis on your signature, you a "Dr Who" fan?  ;) :D

I know how you feel, it happened to me on occasion. You can keep the cured loin refrigerated for a few of days after it has been cured, and smoke it when the rain moves out. I generally let my cured meats "rest" for at least 24 hours anyway before smoking. Even if you get a slight break in the weather you may be able to get the Canadian bacon in the  smoker long enough to smoke.

Garage or under a patio eve, if the wind driven rains won't be a problem.  I'm in a similar situation, but it may be damm the torpedoes... :-\

Just can't bring myself to using liquid smoke . . .

I like the idea of waiting out the storm a few extra days.  Loins are in the fridge forming a pelicle so a few more days won't hurt.
Maybe Mon or Tues night I might be able to get into the smoker.  Monday's weather prediction is for no rain.  Sun and Tues showers.  There's my opportunity.

Love the patio umbrella idea but that won't work for me as the rain is falling at about a 45 deg angle towards the house right where I have my bradley set up.  Been talking with the wife about an retractable, attached canopy to install in the spring time - might have to make it longer, to cover the Bradley too.

Thought about the garage but the kids room is right above it and don't want to risk venturing down that path.

and yes, it is a TARDIS and yes, been a Dr. Who fan for years - started with Tom Baker on MPT (Maryland Public Television) back in the eighties.  But have seen episodes with every Dr.

Sucks that the insert quote option is not working right now.

Surprised they allow swear words like "liquid smoke" on the forum, thought they would be edited out!!  ;) :D

Nice to see fans on the other side of the pond, I watched it religiously as a boy and now my two boys are the same. At Christmas the shops were full of Dr Who toys and the Christmas Special episode with David Tannant and Kylie Minogue was excellent.  ;) :D

Manxman,
We are a bit behind the UK in airing Dr Who episodes.  The X-mas Special has not aired here yet  :(
Can't wait to see it.  What do you think of Tourchwood?

Also the selection of Dr Who toys is very limited here unless you order over the internet and some are direct from the UK.
Can't even get the one episode with Paul McGann (8th Dr) in the Enemy Within on DVD in the US (Region 1).

so, which of the 11 is your favorite doctor?

manxman

Thought Jon Pertwee, Tom Baker and Christopher Eccleston were above average but I think the current Doctor, David Tennant is quite possibly the best IMHO. He had a tough act to follow and has done so brilliantly.  :)

I do watch Torchwood from time to time and enjoy it but not as much as Dr Who itself. My eldest son has all the Christopher Eccleston and David Tennant episodes on DVD whilst I have quite a few of the older ones which look really dated compared to the current ones.

Then of course there are the Doctor's assistants.......... some very s*xy ones over the years!!  ;) :D
