Fajitas

I am thinking about smoking flank steak for fajitas(will also smoke the onins and peppers).  I cannot find any recipesfor this.  I was wondering if a good rub or marinade would work and then I want to smoke using mesquite chips.  Any suggestions??????

I just purchased about 10 lbs. of skirt steaks. Once the rain moves through this weekend, I'm planning on cold smoking about 3-4 pounds with pecan.

Skirt and flank are prepared in the same way. They are not good choices for low and slow cooking. It is best to cold smoke then finish at a high temperature on a grill.

When I'm making fajitas I will use this marinade:

1 - 1.5 lbs. Skirt, flank or hanger steak
Zest and juiced of 2 limes
2 T.           sugar
1 T.           olive oil
2 t.            oregano
1/2 - 1 t.    cumin
1/2 t.         cayenne pepper
1/4 t.         cinnamon

Mix all ingredients; except meat in a gallon ziplock bag. Add meat and thoroughly coat meat, and marinade for at least one hour.

There are several members that may have a better recipe, and I'm sure you will get more ideas.

West Coast Kansan

I like to use salsa. Does not take a lot and works well. Wife used to work for a salsa place so it was always available - I am lazy if nothing else  :). Some level of citrus juice is needed to help loosen up the fibers. Enjoy an experiment ;)
