You don't have to use the wood bisquettes to cook with your BS, but because it is seasoned you may still get a hint of smoke taste on what ever you slow roast in it. Just don't load any bisquettes, closely monitor the temperature that you want to cook at, and it can become a slow cooker. Turning on the smoke generator will give you additional heat, but again to prevent any smoke you should thoroughtly clean the heat plate, or it will produce some smoke, due to any residue still on it. I would still put water in the water bowl, as a precaustion to prevent any drippings from catching fire.
If you get a hint of smoke taste on the food you cook and would like to prevent that, I would put what I am cooking into one of those oven bags, or covered cassorole dish.
