Smoked red-skinned potatoes

I like your idea on smoking onions. In the past I would slice them 1/4 - 1/2" thick and lay them on the trays. You way is easy quick, and it takes up less space.

First time I tried it Habs...we just kinda made it up...but it seems to me I read it somewhere before...I think if you really want them smokey, and fully cooked, they would take quite a bit longer in the smoker...I just wanted a hint of smoke...(and the smokey garlic onion butter too!!)
