I smoked a couple of racks of beef back ribs yesterday. First time trying these and boy was I impressed. I used 3 hours of Hickory @ 220F for a total cook time of about 6 hours. It will certainly be part of my rotation from now on.

A dusting of my favourite rub

I did a mop at the 4 1/2 hour mark using apple juice and BBQ sauce

After 6 hours in the Bradley @ 220F, these guys were ready for sauce.

Mmmmmmm ribs and a fine ale

A little coleslaw, wedge fries, peaches and cream corn.......

In the glass was one of my homebrewed IPA's. The glass itself is from one of my favourite places ever, McMenamins Edgefield in Troutdale Oregon. I need to go back soon........http://www.mcmenamins.com/index.php?loc=3

Looks good Mike. Ribs was last weekend for me, today I've got  a 12 lb bone in butt smoking. You let me know when you are coming over to the island--we'll go drink some IPA and catch some salmon.

I have to say, I was surprised at how far those ribs went. The kids and I had our fill for dinner and I stuffed myself with leftovers for lunch the next day. I'm sure I'll be doing these again real soon.

Sounds like a pub crawl/fish trip is in order. I'm glad your beef bones turned out. My local grocery story has Maui marinated prime rib bones all the time and when I'm too lazy to do my own rub/sauce--that's what I go and get.
