Hello All..
I'm trying to put together a basic list of the ingredients used most often in rubs, sauces, brines etc. If this has been done before let me know it will save me the time. Wet, dry, supplies (foil, etc.) whatever anyone thinks should be in a basic smokers pantry, I'll put together the list and post it later.

iceman

I have a list at the house I'll try to find this weekend. I'll start the ball rolling though.
BEER,  ICE, RUM, COLA,   :D
Oh and meat too. ;)
Seriously, I'll post the list if I can find it. I had to make one when I was taking the CISC class.

Add good friends to Ice's list and you're all set.

Its amazing what one can accomplish when one doesn't know what one can't do!

While obviously not a complete list, a few of the items I always keep on hand are:

Dry:
brown sugar
turbinado sugar
cayenne (I use 60K normally)
chili powder(s) (ancho, serrano, chipotle, etc..)
smoked paprika
cumin
rosemary
sage
nutmeg
cinnamon
granulated onion
granulated garlic
maple cure
tenderquick
insta-cure #1 (Prague Powder #1)
salt
coarse/kosher salt
canning/pickling salt
whole peppercorns (fresh ground pepper)

Wet:
worstershire
soy
terryaki
mustard
apple juice
whiskey and coke (for the cook)

obviously, there are others, but these are probably the most commonly used in my smoker pantry.

Move next door to a very large grocery store that also sells adult beverages, become best friends with the general manager and your problem will be solved.  ;D
Life is short. Smile while you still have teeth.

...and a laptop. You need to be able to order Iceman's sauce!

Not to hijack this thread but I sent you a PM mschafer on ordering the sauce. :)

To add to the Dry:

Coriander
Fennel
Mustard seeds

Sounds like pastrami...

I have been buying more of my spices whole and grinding as I need. The difference in the Coriander vs the powdered stuff is amazing (especially if the powdered has sat in the pantry for a while)

First thought was thong and bikini, but then I went back and re-read the title to this post.

But, in order to add a productive part to this post, I'll say casings of different sizes...at least fibrous and collagen, don't know how long you can store natural.

Consiglieri

Lefty has a pretty good list.

I'd add the following:

Dry Mustard
Italian Seasoning (or plenty of fresh Thyme, oregano, sage and rosemary)
Chile seasoning (in addition to the powders)

Honey

Some nameless regular might mention "liquid smoke."   :D

I'll put the list together and post it over the weekend. Does anyone else have anything to add. I got my package from iceman this week, I'm reallllly looking forward to the weekend, ribs on the menu for Friday and a brisket going in Saturday night  when I get home from fishing.
