Just wondering what everyone does when the recipe calls for 2 tbls of freshly ground peppercorns. Do you use 2 tbls. of peppercorns and then grind or grind until you have 2 tbls. of pepper. I know that there is not much diff. but a little bit may make a diff in some recipes. The smaller the seed the less difference there will be as in mustard seed. Just curious. thks Dave

I'd measure the ground peppercorns. Really hard to say, I usually just measure in my hand. ::)

I grind, then measure.

2T is almost enough to break out the DeWalt pepper grinder.

As the others have mentioned, if the recipe is calling for an amount of ground, than that would be the amount after grinding.  The intent of "fresh" and "peppercorn" is to say that you should grind before using and not use the packaged ground as it has already lost flavor.

Do you really have your Dewalt hooked up to the pepper grinder?

I have heard of that but wondered how well it actually works. It would be a funny thing to use at our parties.

Oh Yeah! It works well. I use it whenever I need more than 2T of Fresh Ground Pepper. The trick is finding a grinder with enough shaft for the chuck to get ahold of.

As said above I always thought they would call out the amount of after processing.. has not hurt me yet  ;D

Another way to tell with recipes is the way that it is written.

For example:
2 Tbsp Freshly ground peppercorns = grind before measuring
2 Tbsp Peppercorns, ground = grind after measuring
If the action comes after the ingredient, you always measure whole then grind, chop, mince etc.

I got the original idea from AB, I actually implemented it in the "heat" of battle making 7 AB Pan-Seared ribeyes.

Putting a coat of pepper on that much steak "real estate" was giving me a cramp.

Viola! the "pepper gun" is born.

It helped that the dog ate the matching salt shaker and the baby knocked it on the floor...

Why didn't I think of that?      I guess it's kind of like the kid who invented the glow-in-the-dark toilet seat.     such a simple thing,,,  I just never thought of it!
