Poor little brisket

So I'm at the local store and they have market trimmed briskets on sale, I usually buy packer trimmed but I like to look!  ;D  Some pretty nice 9-15 pounders and there nestled in amongst them is this poor thing 2.7 lbs cut accross the length of meat....What the heck? It reminded me of the island of misfit toys on Rudolph!...So it came home with me and is now resting vac-sealed in the fridge!

I'm so glad you rescued that misfit brisket....    :)


Bon Appetit had a cover recipe that used brisket last month.  It was awesome.  My original thought was to cold smoke the brisket first but the weather did not cooperate - I will do it next time.   Here is the link to the recipe   http://www.bonappetit.com/magazine/2008/10/texas_beef_brisket_chili
