I have been reading about brisket taking 20+ hours.

However, I purchased a small brisket - about 5.5-6 pounds, but the size of a OBS wire rack, so it is only 1-1.5" thick.

I smoked for 4-4.5 hours at 200-220, then about 4 hours in the oven at 200.  I was just woken up by the smell of done BBQ!

The internal temperature says ~195+ degrees.

Is it done????

Thanks in advance!

Are you stating that the total time was 8.5 hours, that is on the low side. It seems you were smoking/cooking a flat, and not a whole brisket. My flats generally take 12 - 16 hours. If you smoked/cooked at the temperatures you stated, and you placed your thermometer correctly, then it should be done.

A second test (other then internal temperature), is to use a fork, insert it into the meat and twist. If the meat pulls apart easily it's done.

would seem top be done at an IT  of 195,, i have found out that the  thinner meats and smaller  weights take less time to  do then larger  pieces
