There is a sliding water tray on the bottom but is otherwise open for air to the U shaped burner. I have a 4 inch vent on the top and even when I ducted it to right under the exhaust fan the smoke still comes out of the puck tube. Any suggestions??

Is the cover over the puck burner neccessary, looks like that could cause the smoke to back up if theres not enough pull from the top vent.

The cover is actually the adapter plate directly from Bradley. It is designed to stop any grease from dripping onto the burner.

Ah, Thanks Mike, that makes sense because you don't have the v tray you'd have to have some sort of cover.

Tee,

Check the heating element tongue of the smoke generator as to its exact location, it holds a bisquette easily... it looks like the heater might be in the wall of the smoker between the outside and inside. this might add to or be your problem as to having smoke coming out of the bisquette feed tube like you have.

on another note check your top vent to ensure you have proper ventalation there as well and not a down draft which might add to your problem. easy way to check your vent is tape a piece of TP over it and see if it is concave into the hole or a buldge in it.. if there is a buldge then you have a down draft that is your problem and you need to find out why...

I agree with beefman and check to make sure you don't have a back draft problem first.

By the picture it appears the sidewall of the unit is about 1.5 inches thick so it shouldn't be a problem for mounting the generator through it. Having said that in the closeup picture of the generator it appears the adaptor plate is not mounted tight to the wall of the smoker, this might just be an optical illusion in the photo.

Smoke, and the associated heat naturally rises so my thought is there has to be other forces at work here such as a back draft from your vent or the gas burner is pressurizing the chamber.

When you took the photo was the main burner on or off?

The main burner was on when I took the pictures. It seems worse when the burner is on but it does it when the burner is off also. I will check the draft on the vent tomorrow. What would be the fix for a back draft or pressurized chamber? Thanks to everyone for their thoughts. I hope to have this up for Thanksgiving and a test run before the holiday would be even better. T.

If in fact that is the problem I think the answer would be either a larger vent at the top or some type of power assist. The unit I built is similar size or slightly larger and I run a 4 inch top vent, although it is heated with electrical elements.

Does your vent hood seem to suck air fairly well? It appears to be a commercial vent hood.

For some reason I really question if the vent is really pulling any air.

1) find out what is casuing the draft? another fan? incurreectly installed fan?

if it is a fan problem seperate the two ducts and run to the outside seperiatly.

2) cloged duct. ( the interior of the duct may be clogged and get a duct cleaner and clean the duck and home depot useally has them ) if they dont if you can disamble the ducts and see where if any clogs are.

It looks like there is a gas line going into the bottom front of the unit. I suspect that is the heat source. If that is the case, it is possible that the air flow from pushing the gas out to the burner under the water pan is causing the smoke to back out the generator as that is the path of least resistance that low in the unit. You will most likely need to add a small CFM fan on top to draw the smoke and gas exhaust out or switch to an electric heater.

There is a gas line to the front. This unit is called a "Chinese Pork Roaster" and will hold temps from 150 to 400 degrees. The 2 burners are L shaped and create a U shape around the sides and back. I don't want to loose the ability to get it hot inside so if I need a fan on the top vent, what would be the best way to do it?

I have never used this product but I know NepaSmoker has one. It's a power vent for a smoker and runs on 110V. Here is a link....
