Here is what I cooked on Friday night (Please forgive the format- I'm playing with a new program. Pictures are not the best either.):

Smoked Beer Can Chicken (v.1)
--------------------------------------------------------------------------------

Recipe By: bullsi1911
Yield: 1 Chicken

Ingredients:

1 Each Whole Chicken
1.5 Teaspoon Kosher Salt
1 teaspoon Fresh Cracked Pepper
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
1 each Sweet Onion, Cut into large slices
2 Each Baking potatos, Cut into large cubes
1 Can Beer
1 Wedge lime

Directions:

Preheat smoker to 280 degrees
In disposable foil tray, put down the chicken stand, fill with 1 beer.  Arrange chopped onions and potatoes around stand.

Wash and pat dry chicken, remove neck and anything else disgusting inside chicken cavity
Stand chicken on the beer filled stand.

Brush olive oil on chicken body.
Thoroughly mix Kosher Salt, pepper, onion and garlic powder in small prep bowl.
Apply seasoning mix to the chicken, using the olive oil for adhesion.
Plug neck hole with lime slice.

Put the whole assembly in the smoker, and apply Mesquite smoke until internal temp of the thigh reaches 170 degrees.

For a crispy skin, pull whole shebang from smoker when internal temp reaches 140, and put in 400 degree oven or grill untill 170 internal temp is reached.

I ended up having to finish in the oven because a cold front blew in, and cold wind constant wind with gusts of up to 30MPH cooled down the smoker and was making it cook WAY too slow.

And yes- it tasted as good as it sounds.

Looks great.  :)
I have been wanting to make a stand for doing this.
I guess now that will have to be my next small project.

Looks awesome, BullsI !  Do you think the beer added flavor or moisture to the chicken?  Have you done a chicken without the beer?  I'd be interested in a comparison - thanks!

That was actually my first ever chicken in the BDS.  I am still pretty new to the smoker- I have only had it a year and my wife was pregnant and VERY sensitive to smoke smell for 7 of those months!

I plan on smoking another chicken soon.
