Smoked Angus Roast and Salted Syracus Potatoes

Smoking Duck

This was by far one of the best meals I have had in a long time.  Did a variation of the beefmann's roast.  Made a paste consisting of olive oil and fresh minced garlic and onion.  Rubbed it all over the roast and then applied a thick covering of brown sugar, sea salt and fresh ground pepper.  It turned out to be more of a wet rub than anything. Threw it in the smoker with 5 hours of maple/oak (cause that's all I got left) and smoked to an IT of 165, then FTC'd for 3 hours.  At the end of the FTC, made the Salted Syracuse Potatoes (courtesy of Habs) and OMG!  It was as I said, one of the best meals I've had in a long time.  Best part was that the entire meal cost a total of $11 and there was plenty left over (well, no more potatoes, but that's easily fixed; holy crap, I never realized how much 14 oz of salt was!).  Anyways, here's a peak:

SD, Sounds great and yes the onlive garlic should have been the only thing wet ..everything else  should have been applied dry though it gets wet on th garlic mixture.... once everything is on the meat I hope you  let  it stand for at  least 8 hours in the fridge and am glad you  modified it to your  tastes... enjoy my friend

Hey beef, I let it rest overnight and put it on first thing this morning (about 5 am).  It came around faster than I thought it would have, but man was it good!  That's the first time I've ever done a beef roast in the smoker.

C'mon up WTS! Mi casa es su casa  ;)

cool Sd... glad you enjoyed... have maade  several and all been good... the most tender is the one I  made last night and wrapted in foil.. should have added more brown sugaaaar in it though

My wife absolutely loves potatoes and she mowed these down.  I knew I did good when she walked over to the couch and sat down and unbuckled her pants  ;D

Everything looks good. When I make 3 pounds of Syracuse Salted Potatoes I can easily eat 2 pounds myself.  Don't they look like powdered donut holes after you take the out of the water and they dry off. :)

They are different looking.  I have used more salt this year than I probably have ever :D

My theory on losing weight is this Sherlock:

When I die, I don't want people looking into my casket saying. "He looks so good."  I want them saying "Dang, what took him so long?"  ;D

Life is short......smoke hard  :)

HCT-  I gotta believe with all the labs in your household, you gotta have more than one drool bucket around.   ;)  It really was a tasty meal and now, it's gonna be a tasty sandwich for lunch with some smoked cheese on top.
