My first smoking was ...well interesting to say the least. I smoked some cheddar cheese last night, I do believe I have a new flavor... Forest Fire!!!. As it usually goes, I read (after the fact) Larry M's msg. on 45mins. being plenty, god knows my 1 1/2hrs. was a bit much. "Lesson Learned". Really not as bad as it sounds, it is edible, and the guys (Guinee Pigs) at work surely wont care. Venison Jerky is next on the list, prob. tommorrow. Thanks again to Larry M and Chez Bubba for the insight. Was a bit surprised at the temp. of just the smoking element though. it was in the lower 20's here in Pa. last night and my temp was still upper 90's, had to open door several times. time to get creative I guess.  Happy smoking

My experience with cheese is pretty much the same. You need to learn to control the smoke or you end up with an ashtray flavor. I keep the smoke light and go for about 2 hours. It turns out pretty good.

Cheese is the one type of product that I can do as well as what I can get in stores, but not any better. Ir's good enough, but not great. I think there must be some secrets to smoking cheese that the high quality producers employ. Refridgerated smoke? Additives? Who knows.
