25 pounds of Xmas pork tenderloins!

One trip to Sam's later, home with 25 pounds of pork tenderloins, 6 pounds of cheese plus a pound of Tabasco Jack cheese!  Never seen Tobasco Jack before but I'm thinking smoking it can't be all bad.  3 pounds of almonds to smoke and all the spices for Jan's Dry Rub.  Pounds of dried beans along with a spice mix for bean soup.  Tenderloins are in the canadian bacon cure as we speak.  My wife and I essentially have only 3 family members but we have lots of friends who are gonna be happy to see us at their door. ;D

Must confess, Jan and I are trimming and rubbing the Morton's TQ cure on the tenderloins when I look at the container of cure and realize there is way too much cure left.  Read the recipe incorrectly about the amount of brown sugar.  While I'm stomping around in the kitchen madder than you can imagine, my wife calmly says "let's remix the cure, rinse the tenderloins and reapply the cure".  We did, took about 20 minutes.  That's why I keep that gal around.

Love doing this kind of thing even when I screw up HUGE because my wife always has my back.

I do that stuff all the time Ky!! My husband calms me down and is the only voice of reason around! (For those of you who have met Bob...kinda scary ain't it!!!) Nah...I'm kidding...I'm the hothead...he's the sweetheart!!!
