Rock Cornish Hens

Felt like some hens for dinner last night.  Couldn't find small enough beer cans for them though!   ;D
Half lemon quartered into each cavity, rub witl olive oil and seasoned while the smoker comes up to temp!



1 hour of smoke, would have liked to finish in the smoker just did'nt have time!



Popped into the rotisserie for 40 minutes, IT right at 180



And plated up with some teriyaki fried rice and mixed vegetables!

Alton Brown butterflys the Cornish hens, puts them on a panini grill with about 10 lbs of weight on it to flatten them out and cooks for only 12 minutes. It works because I have tired it.

Nice hens Westexas!  We do like the hens around here for sure.  Of course we like a little marinade and something mellow like applesmoke.  We go with rice also (not as pretty as yours).

Looks awesome, WestTexas!  Scott and I wondered if you could use an empty, washed tomato paste can and put some beer in that, and then set the hen on it?

Ok, It's time for one of my dumb questions. Have not had a Cornish Game Hen in many years. The diff between a normal bird and Cornish is.........????

No dumb questions SS, just dumb answers....They're smaller!  ;D  Well they are that, taste is just wee(and I mean wee) bit different and seem to be a bit more tender and juicy.  I usually stick with yardbird or quail, they put this on sale during the holidays and gots to do some!

Thanks WTS, They are a little pricey in Cal, and I have avoided them. Was thinking about a smoke and a Big Easy finish. Gotta check prices tomorrow. Yours looks great!
