Smoked pickled eggs

First of all, Habs, thanks for the recipe!  10.5, here is yet another pictorial for you to view!
Here are the japapeno slices that we smoked:



And, here are the eggs:



We smoked both the jalapeno slices and the eggs with MESQUITE, the forbidden wood.  The jalapenos were smoked for one hour, and the eggs were smoked for one hour and 40 minutes. 

Once we brought the jalapenos in, we added them to the brine, and brought the brine back to a boil.

The eggs were put in a jar:



And the brine poured over the eggs:



Now we will shake them once a day for the next seven days before we will finally get to try them.

That brine smelled heavenly as it cooked - it filled the house!

Those look awesome, Seemores!  I love pickled eggs but the wife doesn't allow them in the house.  Let's just say that she's not a fan of the by-product.  I gotta find a way to sneak these into the smoker.

SD, even if you manage to sneek the eggs into the smoker, don't you think the wife will still find the 'by product' displeasing and figure out what you were up to?
Of course by then its already too late, right?  ;D

Once it reaches the by-product point, it can be blamed on anything.  The pickled eggs look good enough to take a couple of roundhouses from the wife anyways  ;D

The eggs sound interesting seemore, in the u.k. many/most of the fish and chip shops sell pickled eggs, but i reckon with the added kick of the jalapenos and the smoke, they'll be awesome!  ;)

They do look good. I usually wait until after Easter and collect the left over hard boiled eggs for various relatives, but I just might make a batch tomorrow. I'm still trying to locate that site that is dedicated to pickled egg recipes.

Here's a link to the recipe Hab's Pickled Eggs. If you like a sweeter pickle, use cider vinegar and increase the sugar.

Thanks Habs, I will give this a try.  I have around a dozen recipes for pickled eggs I have been collecting over the years.  I have tried a couple of them.  Another one of my favorites is pickled mushrooms. 

Clean & Wash Mushrooms
Bring water to a rolling boil then blanch mushrooms for 4 minutes
Skim mushrooms from water, set asided.
Bring to a boil 1 C cider vinegar, 2 C water, 2 Tbs pickling salt.
Pack a layer of mushrooms, onions, mushrooms, etc in a jar (I use canning jars)
Pour hot brine to cover top layer.
Let cool then store in the refrigerator.

Note: I also add jalepenos to mine, so I layer mushrooms, onions, jalepenos, etc....

I wonder how the mushrooms and jalepenos would be smoked for this recipe......hmmmm will have to give that a try.

Pickled mushrooms sound great!  Especially with jalapenos!!

L'il Smoker, I would LOVE to travel to the UK and enjoy some authentic fish -n- chips!!

I let my mushrooms soak for at least one week before I try them and yes they do soak up quite a bit of brine.
