Grain Marinated Chicken Jerky

So i said SELF, how bouts some chicken jerky  ;D  make it drunk  :o

I sliced up 4 lbs of chicken breast.


Got my dry ready for the wet.
Top bowl is cure 1 t. Left is red peper flakes 2 T. Right is secret powder  ;D 1 T.


Got my wet marinade ready.


Added 1/2 cup of grain  ;D


In goes the cure to the marinade.


Next the red pepper flakes.


Then the secret poultry powder  ;D


I mixed up the wet and dry marinade real good and let is sit for 1 hour to marry.

Next i poured the marinade on the chicken. Mixed wel and refridgerate for 3 hours.




Since its like 6* out and my garage is not insulated or drywalled I had to use my old standby equi-flo dehydrator. My Cabelas dehydrator wont get to temp in the garage being this cold.


Prob going to take 9 to 12 hours.

Looks very nice Nepas!  Got to admit the Everclear brings back scary associations (no memories) but it all  sure does look good.  Puts me in mind of pheasant jerky that my dad used to make.  Dad and I used to both hunt pheasants and raise them so had plenty of pheasant to experiment with.  Later on dad adapted the recipe for turkey which we also raised in plentitude and led to experimentation.

Here is half of whats done of the chicken jerky  ;D taste pretty good. Total dehydrator time was 14 hrs on the old equi-flo.

I made 300 everclear jello shots last summer for my neighbors party. I had a few and landed......in the chair  :D  :D it took me awhile to get up  :D  :o

The poultry powder was given to me by my Amish family. Its pretty secret and took me awhile to get it. Most Amish people (families) dont get to close to the english (as we are called) I can ask them if its ok for me to give it out. Just being thoughtful of their wishes is all.

Amish dont use everclear  ;D thats my own additive  :D
