Jim Beam Bisquettes

Hey All,

Has anyone tried a smoke with the Jim Beam bisquettes?  I received two boxes with an order I just placed on E-Bay, and am wondering what would be the best meat to try with these babies.

If I understand some earlier posts that I read, the wood is really hickory, and came from barrels that the Beam aged in.  Being a slightly deductive fellow..., ('bout as sharp as a marble) I'm thinking that I'd like to try something that I would normally use Hickory for.  Pretty smart of me, huh? ;)

Anyways, if anyone has tried them, I'd appreciate some suggestions.

There is a thread on JB bisquettes. JB barrels are made of oak, so the bisquettes will go good with any meat that oak goes well with. I found it works well on beef (specifically NY Strip steak) and chicken thighs. The less seasoning you use on the meat the more you will taste the difference between JB and regular oak bisquettes.

I've used them twice and both times only the bottom half of the bisquettes would burn. It's not my burner because I've used other bisquettes since and other bisquettes burn fine.

Thanks Habs,

Like I said..., "Sharp as a marble."  I have yet to use oak, simply because I find hickory, mesquite, alder, apple, etc. far more exotic.  I'm a woodworker, and oak is for making shelves and tables.  Never really thought of it much for food.  Now that it's been appropriately seasoned with Jim Beam, I am a bit more willing to entrust it to my BDS6.

I'm gonna have a tough time selling Momma on the idea of popping a NY strip (or two) into the smoker.  Perhaps I should just try it, and see the reaction.

Just cold smoke the steak for 40 minutes maximum, wrap tightly, refrigerate and grill it the next day. It turns out real good.

Oak is great. Any nut or fruit wood works well.

Wouldn't have even thought about cold smoking a steak before grilling.  This may make the whole idea much more palatable to the Mrs.  Thanks Habs and Pens, I'll let you know how the first endeavour turns out.

You have got to try the cold smoke Strip steak.  I like to warm smoke it and pop it right on the smoker for a quick sear.  With that it holds the smoke and lot and it has a good seasoning.  But a weird effect is the juicyness.  Its incredible.  Warm smoke is puck burner only and toss right on hot grill for quick sear.  With practice you can get it perfect medium rare.  To long and you loss smoke flavor.

There may not be a thread on JB bisquettes, it's probably a thread that started off as another topic.

Cold smoked steaks are good, but I can't take credit for that. I forgot who originally posted that method, but it was quite a while back.

Thanks for all the feedback.

Don't have any strip steaks at the moment...., so I improvised with some venison steaks.  They're in the smoker now.  I won't have the opportunity to "sear" them on the gas grill, so they'll have to go into a zip-lok til later.  Not sure if I'm gonna try to grill tonight (high temp is supposed to be about 0F later this afternoon), or if I'll make cubed venison over rice. 

Will try to get back to everyone and let you know how the Jim Beam Bambi steaks turned out.

I just ordered a box of 120 Jim Beam pucks from Y&P and just now "as of this morning" smoking some pork ribs I rubbed down and set last night.

I LOVE my hickory and apple, but with out tasting the results yet, the smell of those JB pucks burning are incredible. So far I have a new favorite.

The results: Me and dad loved the JB pucks. Smoked ribs Friday and let sit foiled over night for Sunday dinner. No pictures, camera batteries died :(

Real good with a haunting flavor of our favorite Kentucky Bourbon :)

I really hope the JB pucks are here to stay and not a promotion one time deal thing, because we now have a new favorite to add here at home. Hickory, apple and the new Jim Beam pucks.

Love them so much, if I smoke with hickory and cut with some oak, I'd just assume use my Jim Beam pucks.

But if there just a promotional thing thats not going to last, I'm gonna stock up on those suckers and act like that dude on the Twilight Zone episode who had the gold, went into the future and wouldn't even take water for them until he was ready to keel over at the end.

Even unwrapping them smelled good.

Any chance on Tabasco pucks?  ;D

That funny that you should state that. When Bradley had the Crown Royal promotion, I sent an email last year inquiring if they could contact Tabasco and make an agreement to use their barrels; since Tabasco is already using their barrels to make chips.

I got a response personally from Wade, stating that the two (Bradley and Tabasco bisquettes); would make a good combination. I believe he was going to look into it. One can only hope that they are coming soon.

It got the best of me, I called Bradley to check on the JB pucks. The kind lady put me on hold to check out if they were just a promotional thing or not. When she got back on the phone, good news, Jim Beam and Bradley have a contract for 3 years right now. After that 3 years the contract needs to be renewed.

Me and bro KyNola live in Kentucky so if JB don't we'll go down on the bourbon trail hooten and holleran maybe if Ky is up to it :P

I also asked her about the possibility of Tabasco pucks being theres been some talk about this as well. She sounded pretty excited about that one and said shes defiantly gonna pass it along.
