Meat Loaf

Have been craving meat loaf for more than a month.  Finally got off the dime yesterday and made some.  2 pounds of pork loin, 2 pounds of turkey breast and 2 pounds of chuck, all ground at home.  Throw in some ketchup, A-1 sauce, garlic, onion, pepper, chipolte powder, eggs, crackers and probably some stuff I am forgetting.  Mix it all up and let it sit outside in the cold for an hour or two.  Onto a rack and into the smoker for two hours of cherry.

Into the oven for a bit to get that stuff in the middle cooked up


Put it on a plate with a baked potato, some cucumber, daikon and carrots and a really fine dinner is born!

Gizmo, the secret here is leftovers.  We like meatloaf, we like meatloaf sandwiches even better!

That ain't no Meatsphere!  That there is one of them USO's  ----  Uneaten Smoked Objects!  They is rare - don't see many - they looks and taste so good that they is scarfed down right quick like!  It's lucky when you can get one on the camera before the carnage hits!

I'm with ya there.  I slap mine on raisin bread with a little mayo and iceberg lettuce - then I'm in hog heaven.
