smoked what????

Up In Smoke

a friend at work asked me about smoked green beans.
evidently he was in Tennessee and found some smoked fresh green beans
he asked if i would try them, i did with miserable results.
is there anybody here that has done these with success.

I would just apply about 40 minutes of cold smoke, and then cook them as you would in any dish. I had a friend who would cold smoke them, and pickle them. He would use the string beans as stirrers in mixed drinks. I have to get his pickle  recipe from him.

By the way, how did you prepare them that made it disastrous.

Smoked Green Beans are the best! Gotta be a cold smoke though. I try to keep cab temp at 65 max. Into the veggie steamer thingie, then simmer with some spicy Tasso and onion...Yum!
They have to be able to still snap after the smoke. I use Apple also.

The only smoked green beans I have ever heard of here in Tennessee is that some families put their leather britches in front of the fireplace to speed the drying and they pick up some smoke flavor.  One more than one occasion, I have put some EVOO and some sea salt and black pepper and sometimes some minced garlic on some green beans and put them over a hot fire for a few minutes.  Pretty good eats!

I have had this recipe in my recipe collection for a couple of years, but have yet to try it.

Aprox 40 fresh green beans
2 cloves of garlic
2 medium slices of onion
2 healthy spoonfuls of butter

1. mince the garlic and chop the onion
2. Combine green beans, garlic, onion and butter in a casserole dish.
3. Smoke for about 1 hr uncovered @ 250. Stirring occasionally. (mesquite)
4. Cover for 1 hr or until soft.
