Brine Question

I have a turkey I want to brine before I smoke.  My question is if 1 batch of brine will not cover the turkey, do I keep making batches of brines untill it does cover or do I just add more water to the initial brine? 

My thinking is I need to make more batches of brine to cover it otherwise if I just add water to the existing it will be too diluted.  Am I on track?

You are thinking right friend.  Also too...not to be a butt here but what kind of container are you using?  I'm just thinking of volume vs. the size of the bird and waisted space.

I have a round cooler that is just a bit bigger in diameter than the bird.  It should just be big enough that that the bird won't touch the edges.  The only thing I need to do yet is submerse the bird to see how much liquid it actually takes to cover it.

Just get a large plate and put a some sort of non metallic weight and put on it.  I would not worry about "not touching the sides"  give that thing a move from time to time and i think it will fine.
