Pork Loin Tasso

I seasoned and smoked this piece of loin about 5 months ago. Its been triple wrapped in the freezer since. Going to make a dish and need some Tasso. This Tasso was heavily seasoned, its still frozen some so its going in the fridge until tomorrow.

Looks really good NePaS.  Lost about 5 pounds of tasso during the ice storm :'(.  Time to make more  Got all the fixings for chicken and andouille gumbo in the frig minus tasso.

Have some left over Tasso. Cut some up and adding to some mexican pinto's  ;D Heavy seasoned NOLA  ;D

I'm in NePaS!  I'll pack my 13 quart dutch oven and andouille sausage and head your way.  Start chopping up the vegetables and browning up some chicken.  I'll make the roux when I get there.  :D :D
