cornish game hen

anyone know how long too cook game hen at 250 degress, i know internal would be 165, but have too work today, want too set it and get back too work, thanks, terry

Hard to give times with them......they're done when they're done.  I wouldn't put more than 3 hours of smoke on them though.  Keep your vent wide open.  Too much depends on ambient temps to give an accurate timeline.

I know its a month late on this one but here is one form the Smoke & spice cook Book.  They are called
"Dandy Little Hens"

Dandy Dunk (Marinade)
1 1/2 C Tequila
1 cup freshly squeezed line juice
1/4 Cup Triple or other orange flavored liquor
1/4 Cup minced onion
1/4 Cup vegetable oil
2 Tbsp Worchestershire sauce
Pinch of Cayenne
4 Cornish hens
Salt & Pepper to taste
1 line, sliced into 4 wedges
1 small oranage sliced

At least 4 hours and up to 12 hours befor smoker combine ingredients.  Put game hens in plastic bag, pour marinade over them and refrigerate.
Prepare the smoker bringing temperataure up to 225 degrees
Remove hens from refregeraator and drain.  Sawlt & Pepper the  birds lighrtly. Stuff their cavities with the orange slices and lime wedges. 
Transfer the hens to smoker, brest side down and smoke for 2 1/4 to 2 1/2 hours.  Turn the hens over about halfway througah the cooking time.
NOTE:  I have used this recipe many times but i net the birds and hang from top basket.  makes better appearence.

That recipe looks great. I have 4 hens in the freezer. I give it a try.

That does look good. I'll have to try it.
I have Smoke and Spice, but don't remember that one.
    I've been meaning to try a cornish hen recipe that I made
about thirty years ago. It was from the original smokey joe
cookbook that came with the grill. It was really good, I just have
to find it. From what I recall, it was a marinade of white wine, garlic
and butter with some spices. It has to be good if I remember it from
that may years ago.   ;)
    I'll post it if I can find it.

I did Cornish Game Hens last weekend.... I followed the recipe on the Bradley web site, using cherry and stuffing with butter and anchovies...

They took about 3.5 hours at 200-225F, and the results were awesome. My wife made chicken salad sandwiches the next day and I thought I was going to die. Simply one of the best things I've ever eaten.

BTW I did brine them for about 2 hours or so in water, salt and sugar.

better late then never father tom, thanks for the reply, as i'm back for some more cornish game hens tips. i'm not sure you can cook anything bad in a bradley smoker. thanks again for the tips, terry
