Walleye

Hi Folks, has anyone tried curing and smoking walleye?  Walleye season is fast approaching here on the Columbia River.  My wife and I think it is the best tasting fish in the water, however that opinion has been formed using traditional cooking methods.  We have never seen any recipe for smoking walleye.   ???

The very low fat content of walleye doesn't lend itself to smoking real well. I have never really tried either. I know from time to time I've see the odd recipe. I know  a number of people say Bouche's Trout recipe over on Olds recipe site is really good on any fish. Might worth a try. Here is a LINK

I'm going to have to do some experimenting this. Keep us posted if you give it a shot.

I love fish too much too smoke the really good tasting ones. I usually do whitefish or northern pike. But I am sure it would smoke real well.
