My first inclination is to start with "raw" meats and veggies as the basic ingredients - no existing enhancements like already fried, breaded, smoked, or whatever.  You could add processed foods but the 3 main ingredients probably ought to be au naturel.

What about commercial rubs and sauces?

I'd probably stay with "basic" meats with potential for various interpretations.  Shouldn't chicken and/or turkey be in in the hat?  Parts or whole?  Not sure about shrimp as the "main ingredient" but what do I know?

Come to think of it, why have specific cuts at all?  Why not just say, "Make something out of pig (or cow or chicken) and celery and peanuts?"

Yes all meats will start as Raw

Chicken and Turkey will be in the mix probably turkey breasticles to make it easier to obtain.

Pretty comprehensive list.  Some thoughts ...

We don't see much decent catfish here - maybe a bit too regional.
Tri-tip may be a problem for some as I recall from another thread.
Sausage may cut out a bunch of folks who don't make their own.
Already made sausage-like foods (Vienna, Smokies, etc.) are already pretty much worked over & may not leave room for much creativity.
Tilapia - not considered food here - we grow them in sewers and canals (that word was supposed to be c*a*n*a*l*s but the automated Curse Cop struck again - *** ****l!).
Hash browns & Tater Tots should be consolidated into "Potatoes."
Fresh okra not available everywhere.
Pine nuts - way expensive (at least they are here)
Boca Burgers - You're kidding, right?

How about lamb (generic) or some other cuts?  I think leg/boneless leg is pretty much available everywhere.

When listing meats, why not consider just using the major cut instead of being more specific?  For example, beef categories might be chuck, rib, loin, round, shank/brisket, short plate & flank.  Pork could be shoulder butt, picnic shoulder, loin, side, & leg.  That would give people more flexibility and opportunities to be creative.

Okay - I'll quit now.

Habanero Smoker

If we have to start with raw meat; looking at the list Little Smokey's sausages, Vienna sausages may be difficult for many to participate. Usually if you buy these commercially they are already cooked, and many don't make their own sausage. Maybe those sausages should be moved to the "Others" category. The same argument can be made with ham, if it is not fresh.

Also for oxtails, they are difficult for me to find, and often when I do find them they are not worth buying.

Brian - Thanks for changing the list yet again to allow the post to be read as written.  I took out the last two words now that they've become offensive.

A small step for Bradley; a large step on my quest to find a legitimate use for every censored word.

grovels... grovels... reads the post again.... kicks the hotel.... reads the post again.... grovels somemore....  kicks city hall... if I hade my place id be in with at least 3  ideas already and compleate meals as well..... oh yeah get to taste all 3  flavors in one bite.

Am thinking shreaded pork, shreaded beef with some smoked italian sausage  mixed in... all that mixed with scrambled eggs wrapped in a flower totillia and salsa.

La Quinta

Lets just do this...there are so many meats...I think it's very fair...and for those who can't get a meat...the list is big enough? I like the idea a lot!!! Think of the very kool recipes that can come out of this!!! I have no idea what I will make but am really jazzed about what other people do!!! Bragging rights aside...it's great for the forum...IMHO...
