You should just about have them sticks mastered by now. Or do you need some more training on the subject?
That's a nice looking stuffer you got there. Is it a hand crank, or motor driven? Either way it's pumping out some good looking sticks.

This Between Nov.Dec i think i'm around 150 pounds. Thats venison, beef and pork.

No i do not. I can just about do the feel/squeeze test to see how don they are. I do use a Thermapen too.
In my smokehouse the probe hanging in my ET probe.

Today I made 15 lbs of Elk pepperoni beer sticks. Tomorrow I smoke. I make mine 12 inches long and then bend in half making 6 inchers.
