This Between Nov.Dec i think i'm around 150 pounds. Thats venison, beef and pork.

Just remembered I need to take Mel's deer meat out of the freezer, luckily the wife hasn't left fro work yet. Dam that was close.

No i do not. I can just about do the feel/squeeze test to see how don they are. I do use a Thermapen too.

In my smokehouse the probe hanging in my ET probe.

Today I made 15 lbs of Elk pepperoni beer sticks.    Tomorrow I smoke.    I make mine 12 inches long and then bend in half making 6 inchers.
