A couple pics.    I was hoping to get these written up but haven't had the time yet.  I'm at day three on the cheddar and all is good so far.

farmhouse cheddar just after pressing

So this means cheese making 101 is starting soon?

You know we live about 30 miles apart so I'd be happy to do some taste tests, from a culinary standpoint of course. ;) :D
How's Saffron? She must be coming into her own soon.

Hmmm, it looks good, but there seems to be a distinct flavor of smoke missing.

Give her time Kevin. I can see that block of Farmers heading into the Bradley in a couple of days. Deb it does taste pretty darn good smoked. I smoked some from the dairy.

I only own half of that cheddar, maybe I'll smoke a quarter before waxing.

Mike - maybe I'll bring saffron up to meet the alpacas. She's doing great and very spoiled.


I don't think I'll get the cheese post written up before this weekend.

There seems to be some bites missing from those pictures?
Low resolution camera or hungry photographer?

Looks good though. Its getting to be cheese smoking weather here and I will be giving this a shot soon

Smoked farmers cheese is great, one of my favorites.

Looks really good Deb! I always heard mascarpone was really good. I never seen it in any stores around here so I have not had the chance to try it yet. Whats it like? Cream cheese in taste? Would it be good in ABT's? I'll have to check out a couple of the bigger stores next time I there.

I have only had it a couple times and in desserts.  What I made is creamier (taste & texture) and milder than cream cheese.   


I think I would stick with the cream cheese in abts because it's much cheaper (purchased anyways).
