Title: Mississippi Brisket

Decided to take smoke Brisket for the Mississippi Hunt.

Almost a 14lb brisket and rubbed it with Zack's Original Brisket Rub.

In the Bradley with some "Friends" getting Oaked Smoked

Auber in place and gonna leave it alone.

It's 14lbs and is too big for the rack.

I forced it in and it will shrink to fit.

That "odd shaped", "Yak" looking, "Camel" brisket somehow got magicially transformed by Gabi during the nite into a

lean, mean Brisket machine!

Man I'm hungry now, nice loking piece of meat there CRG. Briskets hard to come by here in my neck of the woods, but my local butcher can order them in. I gess I'll have to order one up now. Thanks. :D :D

Wifie was standing there when I was taking this pic and after several deep intakes of air thru her nose,

she told me I wasn't taking ALL that Brisket with me to Mississippi.

I let her win this little Battle, cause I never planned to anyways! ;D

Nice looking smoke.  It takes real talent to turn a piece of Yak or a Camel Hump into a masterpiece.

The smoke is just right. 5 hrs of Oak. The rub is delicious.

That's way to warm for January now the 11* I have is about perfect for smoking. Not so perfect for standing outside and drinking beer but it is good for smoking.

I think by Friday, we will be back to freezing 3 nites in a row!

This is good weather to get sick in.

That's a late season compared to your home state.  Smooth Bore, Rifle, black Powder, Bow or bare foot with a Bowie Knife?

Those two leggers may turn out to be turkeys.  

The Brisket looks killer.
