This is ridiculously easy to make... And very good. The original recipe is a bit bland, so this one was kicked up a number of notches.
This is a double batch.
Preheat oven to 325°.
In a large covered greased casserole dish, layer:
- Stick of butter, cubed
- 2 cans of corn with liquid
- 1 onion, diced
(at this point, I lay on some spices, BBQ rubs, Soileau's, garlic salt, Goya Adobo, black pepper)
- 1 pound uncooked spaghetti, broken into thirds
- 2 cans creamed corn
(spice it all up again - the more the merrier)
- 1/2 bag of shredded cheese
Cover and toss into oven. Set timer for 20 minutes.
At 20 minutes, haul it out and carefully stir. More like 'fold' - you are trying to get the spaghetti submerged.
Cover and back in the oven. Set timer for 20 minutes.
Repeat stir/fold/cover. Set timer for 20.
At the 60 minute mark, give it a few more good stirs, incorporating the rest of the shredded cheese. Turn off oven and leave covered for a bit - it will still be boiling hot for a good hour or so.
The liquid from the corn steams the spaghetti noodles, and the starches released from the pasta thickens the casserole. (and the cheese helps glue it all together)
Easy Peasy!
Where's the pics Squirt!!!!! Sounds great!
Sorry, we had made it for a dinner party this past weekend. I did get a shot of some of the leftovers.

I'm not usually a corn casserole fan, but I'd eat that! Looks great!
I'm not a Spaghetti fan but I'd eat that.
How big of a bag is that half bag of cheese?
Squirt..........I copied that to my recipe file and printed off a copy. I'm going to try it with a bag of 3 cheese blend.
OU812.........I think it's a one pound bag. half in the original layering and the other half folded in later.

Correct, just a 1 pound bag of shredded (whatever) cheese. I used sharp cheddar in this one.
You can add to it if you like... Crumbled bacon, sausage, etc.
Using some of that 'fiesta' corn w/ the diced chiles would really add some zip.
Not sure but it does look good!
man that sure does look good.
Fair warning... If you are watching carbs/starches - this isn't for you.
Whats carbs/starches? ;D
Nice Squirt!

With crumbled bacon and using the fiesta corn instead of regular corn.......friends, we just moved to a whole different time zone.....known as the yummy-in-my-tummy zone!!! ;D

Only question I have (I'd be making adjustments/substitutions for ingredients anyway), is, what size cans of corn and cream style corn? They have about 4-5 sizes at the stores here.
I used the Del Monte 14.5 oz cans.
Well It went something like this.
Got all of the ingredients rounded up.

Sprayed the baking dish and added the butter
(http://i222.photobucket.com/albums/dd237/tenpoint5/S8004949.jpg)
Then added the 2 cans of regular corn and some reconstituted onions
(http://i222.photobucket.com/albums/dd237/tenpoint5/S8004952.jpg)
Then seasoned with salt pepper and garlic topped it off with the spaghetti noodles broke into thirds
(http://i222.photobucket.com/albums/dd237/tenpoint5/S8004954.jpg)
Then the other 2 cans of creamed corn
(http://i222.photobucket.com/albums/dd237/tenpoint5/S8004955.jpg)
Then topped it off with the cheese

Covered with foil and into a 325º oven for 20 minutes stir/folded waited another 20 minutes then stir/folded again. Then I added a smoked sausage that I had sliced up.

Waited another 20 minutes. Added some more cheese mixed it in and put back in the oven for another 5 minutes waiting for the cheese to melt.

Plated for supper

Results: Extra cheese is not always better. (I had a couple of small bags about 1/4 full so they also went in)
Very sweet
Passed the kid test. (Except for the one that complained about not liking his food all mixed together)
I will make it again but will probably follow the directions a little closer with a few minor flavor adjustments.
This is a kewl recipe that can be "added to as needed".
My Wifey will like this. A full meal and one dirty dish.
Her kind of cooking. ;D
The candle was a nice touch Chris. :)
Man - I want this bad! WITH BACON!!!!!
BACON BACON BACON !!!
Thats what I was a thinkin.
Heck I think my wife might be able to cook this. ;D
One pan cookin is her specialty. ::)
Heck she cooked enchiladas last night, I almost fell down when I walked into the kitchen.
She used TWO pans. :D
Oh heck, just get a stack of foil 1/2 sheet pans from Sam's! ;D ;D
Chris, it will be much better the next day if you have any left over. Takes a while for the flavors to meld.
I lay the spices on pretty heavy to 'un-sweeten' ours.

I have complained about the candle on the stove several times. That particular one on numerous occasions. I will repeat the words that were spoken to me "It isn't your Kitchen!! It's mine, I just allow you to be in it on occasion!"

You need to get a pellet pooper and call it "your" oven!
(but don't use her pretty white corningware in it... Ask the monkey about that..)
Do they make bacon scented candles??
