Title: Cheesy Pepper Sticks

Made up 12 lb of snack sticks using 7 lb deer and 5 lb pork butt.

Ran through the grinder again

The seasonings and cure were all mixed up before starting.

Dumped in the wet stuff and some cheese.

All mixed up and ready to stuff.

Smoked for 3 hr using Pecan.

Then in the fridge uncovered for a couple days and wallah.

What a machine you are, Nice job, what was your IT or did you just go straight to the fridge after 3 hours. You are just taking this to a whole new height.

Took them to an IT of 152 F let cool at room temp then to the fridge.

It does take some gettin use to with the double barrel stuffing tube but when ya get the hang of it you can shoot out some sticks.

those look killer! I have been reading about stick making here the last few weeks cannot wait to get into it.....

quick question.. I have not heard or read what people buy for a stuffing machine? any recommendation for someone just getting into it? as well as a basic casting?

again looks great...

hybridcx get a hold of Kirby (pickman_95) he is a forum member here and he can set you up with a really good stuffer and mixer as well. A lot of us have his kirby stuffers and just love them.
