Cheesy Pepper Sticks

Made up 12 lb of snack sticks using 7 lb deer and 5 lb pork butt.



Ran through the grinder again



The seasonings and cure were all mixed up before starting.



Dumped in the wet stuff and some cheese.



All mixed up and ready to stuff.



Here we go!



103 of them bad boys.  ;D



Smoked for 3 hr using Pecan.



Then in the fridge uncovered for a couple days and wallah.



All packaged up.



A couple tasters for the cook.  ;)



Did I mention these were Pepper sticks?

Man can you taste the black pepper.  :o

What a machine you are, Nice job, what was your IT or did you just go straight to the fridge after 3 hours. You are just taking this to a whole new height.

Took them to an IT of 152 F let cool at room temp then to the fridge.
